Cheese thins are something my mom and I have always made around the holidays. I remember eating tons of cheese thins every year at Thanksgiving and Christmas. They are really simple to make and taste delicious! They do have to chill overnight, so make sure you plan for that.
Homemade cheese crackers like these make a great holiday gift for family members or friends. These crackers are soft, but crunchy, and taste great! I like to make cheese thins and Splenda Chocolate Chip Cookies around the same time so we have options when looking for a snack.

- 1 cup flour
- 1 teaspoon salt
- 2 cups grated cheese (I use cheddar)
- 1/4 teaspoon paprika
- 3/4 cup pecans
- 1/2 cup creamed butter
- Sift flour and add salt, paprika, cheese, and nuts.
- Add to creamed butter and make two rolls. Put in refrigerator overnight.
- Slice thin and bake at 350 degrees F until light brown (10-15 minutes).
